Howes Cave, NY – The Fly Creek Cider Mill & Orchard delivered 800 pounds of New York Cheddar Cheese to Howe Caverns to be cave-aged for two years in the Caverns’ consistent 52-degree temperature. The cheese, already aged three years at the Mill, is being set aside for a special release during the Mill’s 150th Jubilee Anniversary Season in 2006. "We wanted to do something special for our upcoming anniversary and this should work out great," said Bill Michaels, co-owner of the Mill. "We are famous for our extra-sharp, Mill~aged cheddar. This cave aging goes a step further to make it smoother and richer. It is constant temperature that we are after, and there is no better place for that than at Howe Caverns." The cheese will be aged to a tasty total of five years when removed for the Jubilee Celebration.
Howe Caverns, now celebrating its 75th year also ages Brewery Ommegang’s Belgian-style beers. General Manager John Sagendorf says, "We already have teamed with the Mill and Brewery to promote tourism and now we are happy to provide a unique storage facility in creating superior quality Pride of New York products made right in our own region.
The Mill will open for its 148th season on May 13th with over three tons of two- year old cheddar to sample and sell. The Mill has renovated its sales floor with the addition of a temperature-controlled apple display room. Customers now will be able to hand select their own New York Apple Country® Apples maintained at the right temperature for peak freshness. "This is our largest project since purchasing the Mill in 1999, done to ensure that our customers receive the best quality apples available," says Bill.
The Fly Creek Cider Mill & Orchard is located three miles north of Cooperstown just off of State route 28 in Fly Creek, NY. They are open daily from 9 – 6 starting May 13th.
